FINCA LAS FLORES
Finca Las Flores, located in Pitalito, Huila, Colombia, is run by brothers Johan and Diego Vergara, building on over 30 years of family farming excellence. Founded by Edilberto Vergara and Nubia Ayure, the farm began with 16 hectares of coffee. After Nubia's passing, Johan and Diego took the lead, bringing fresh ideas and a drive for innovation in fermentation and processing. Diego oversees production for consistency, while Johan drives innovation to highlight unique coffee characteristics. This commitment has established Las Flores as a benchmark for quality in Colombian specialty coffee.
PROCESS
EXPERIMENTAL
The Las Flores Pink Bourbon undergoes an experimental processing method at the farm. After selective harvesting, the cherries experience staged anaerobic fermentations, oxidation, and a brief thermal shock to enhance flavour. It is then decaffeinated in Colombia by Descafecol, the country's only decaffeination plant. They utilise a gentle, water-based method employing Ethyl Acetate derived from sugarcane as the solvent, which preserves the bean's integrity and results in a clarity of flavour not found in other decaffeination methods.

Pink Bourbon is a rare and highly sought-after Arabica varietal, believed to be a natural cross between Red and Yellow Bourbon. Predominantly cultivated in southern Colombia, it is prized for its distinct floral and spicy profile, delivering layers of complexity and remarkable aromatic intensity. This varietal offers clarity and elegance, with its unique character significantly enhanced by specific processing methods. Finca Las Flores is known for producing this exceptional variety.
ROASTER'S NOTES
APPROACH
In the last year we've completed over 300 roasts, 170 KG, 62 coffees, and this is now our 5th decaf coffee, and certainly our highest scoring decaf. Our approach to roasting decaf in general is to treat them with a more gentle touch, with lower charge temperatures, and this was no exception. This coffee displays an explosion of flavour, we kept development time short to preserve the innate punchy flavours of this rare decaf find. Since roasting this coffee, we've never been so decaffeinated, and it feels great.
